This carpaccio must be kept frozen, but pop it into a basin of water, and you will find it defrosted in less than two minutes, and ready to serve.
For a creative cannelloni, slice a packet of kudu carpaccio to add to a creamy spinach filling. Pipe the mixture into cannelloni tubes, cover with freshly made tomato sauce and mozzarella, and bake. For a light lunch, layer carpaccio in a crusty bread roll with a fruit salsa.
