Warthog fillets can be used as a substitute in any recipe that calls for pork fillets. It is a leaner tastier brand of pork but like its domestic cousin, gets dry if overcooked. Warthog fillet is a fine-grained tender pink meat and makes an ideal base for a sweet and sour sauce.
Sosaties can be made using cubed pieces of fillet marinated in a sweet and sour sauce and then skewered with red pepper, pineapple and onion between the cubes. We recommend making the sweet and sour sauce by mixing vinegar, oyster sauce, soy sauce, olive oil, crushed garlic and apricot jam. Marinade the cubed warthog in the sauce before assembling the sosatie and grilling on a hot fire.
